Winemaking at Stone Eagle is the work of patience and restraint, a non-interventionist approach that allows these exceptional wines to evolve over time. From carefully harvesting the finest fruit at the perfect peak of ripeness, to guiding it through gentle fermentation, every step is intentional.
Extended Barrel aging allows the wines to mature and evolve slowly, building structure and nuance that cannot be rushed. Stone Eagle favours premium French and American oak with tight grain and lighter toasts, which allows for longer aging without compromising the wine. Each barrel is crafted from staves that have been air-dried longer to ensure soft tannins and refined structure, along with remarkable depth and balance. Final wines are created through an exacting blending process, and extended bottle ageing allows the wines to achieve extraordinary harmony.
Stone Eagle’s Estate vineyard is set on 30 acres of former peach and apple orchards. The Tavistock soils are about 95 meters above sea level, the proximity to Lake Ontario provides a uniquely warm microclimate and extended growing season. Each vine is meticulously tended throughout the year, embodying the science of viticulture and the art of letting the vineyard speak. The crop is limited by actively thinning clusters and leaf removal maximizes exposure of the grapes to all-important sunshine. This harmony between land and craft allows Stone Eagle to nurture the best possible fruit from every vine in every vintage.
